Default Watering Container Tomatoes

Let me start by saying that I am a complete newbie/failure when it comes to growing anything except mold in my refrigerator.
However, in my twentieth attempt to grow vegetables, I have some tomato plants doing pretty well outside in a cheap 14" deep plastic container with a removable bottom dish. In an effort to keep them watered sufficiently, I removed the bottom tray and placed the container inside a larger container filled with water. The plant has remained hydrated (I keep feeling the top soil) and all I have to do is replenish the water in the larger container every couple of days. The plant SEEMS to be doing well, but am I doing the wrong thing? Would I eventually drown my plant, or does it have the ability to soak up only what it needs? I mean, watering plants CANNOT be this simple, right?
(p.s. the soil I'm using is organic garden soil that we found out later says "not for containers"...yes, it was an accident. Seems like the little buggers are growing in spite of me.)

I think over watering the plant will decay the roots of the tomatoes so , it is better that you water it as needed rather than keeping it in water filled container.
just water it once daily or twice it will do for the plants.
